Honey Dijon Salmon with Green Beans

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 12 ounces green beans, trimmed
  • 1 tablespoon olive oil
  • 2 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 garlic clove, grated
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving

Directions

  1. Heat the oven to 425°F and line a sheet pan with parchment.
  2. Toss the green beans with olive oil, half the salt, and pepper. Roast for 5 minutes.
  3. Whisk Dijon, honey, lemon juice, garlic, and remaining salt.
  4. Move the beans aside, add salmon, and brush the glaze over the fillets.
  5. Roast for 9 to 12 minutes, until the salmon flakes easily and reaches your preferred doneness.
  6. Serve with lemon wedges and the roasted green beans.
