Creamy Tuscan Chicken Orzo

Ingredients
- 1 1/2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 1/2 cups dry orzo
- 3 cups low-sodium chicken broth
- 1 cup halved cherry tomatoes
- 1/2 cup half-and-half
- 1/2 cup finely grated Parmesan
- 3 cups baby spinach
- 1 teaspoon Italian seasoning
Directions
- Season the chicken with salt and pepper.
- Heat olive oil in a deep skillet over medium-high heat. Brown the chicken for 5 minutes, then transfer it to a plate.
- Cook the onion for 3 minutes. Stir in garlic, orzo, and Italian seasoning for 1 minute.
- Add broth and tomatoes. Bring to a simmer, return the chicken, cover, and cook for 11 to 13 minutes, stirring twice.
- Stir in half-and-half, Parmesan, and spinach. Cook uncovered for 2 minutes, until creamy and the chicken reaches 165°F.
- Rest for 5 minutes before serving.
