Sheet-Pan Shrimp Fajitas Recipe

Prep: 15 minutes   Cook: 18 minutes   Total: 33 minutes   Yield: 4 servings

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil, divided
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon kosher salt, divided
  • 1 1/4 pounds large shrimp, peeled and deveined
  • 1 tablespoon fresh lime juice
  • 8 small flour or corn tortillas, warmed
  • Lime wedges, cilantro, and sliced avocado for serving

Instructions

  1. Heat the oven to 425°F. Place a large rimmed sheet pan in the oven while it heats.
  2. Mix chili powder, cumin, smoked paprika, and garlic powder. Toss peppers and onion with 1 tablespoon oil, half the spice mixture, and 1/2 teaspoon salt.
  3. Carefully spread the vegetables on the hot pan. Roast for 10 minutes.
  4. Pat the shrimp dry. Toss with the remaining oil, spices, salt, and lime juice. Stir the vegetables, add shrimp in one layer, and roast 6 to 8 minutes until the shrimp are opaque and pearly.
  5. Serve immediately in warm tortillas with lime, cilantro, and avocado.

Why this recipe works

Preheating the sheet pan starts browning the vegetables right away. Giving peppers a head start prevents the quick-cooking shrimp from becoming rubbery.

Helpful tips

  • Pat shrimp dry so they roast instead of steaming.
  • Choose shrimp of similar size for even cooking.
  • Use corn tortillas for a gluten-free meal, checking the package label.

Storage and reheating

Refrigerate shrimp and vegetables within 2 hours for up to 3 days. Reheat gently to 165°F and assemble with fresh tortillas.

Food-safety note: Cook shrimp until pearly, opaque, and curled. Avoid cross-contamination from raw seafood.
