Ripe bananas, brown sugar, and a little sour cream make these chocolate chip muffins moist, tender, and tall without becoming heavy.

Chocolate Chip Banana Muffins

Ingredients

  • 2 cups (240 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine salt
  • 1 1/2 cups mashed very ripe banana (about 3 large bananas)
  • 3/4 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted and cooled for 5 minutes
  • 2 large eggs, at room temperature
  • 1/4 cup sour cream or plain full-fat Greek yogurt
  • 1 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips, plus 2 tablespoons for the tops

Directions

  1. Heat the oven to 425°F. Line a standard 12-cup muffin pan with paper liners.
  2. Whisk the flour, baking soda, baking powder, cinnamon, and salt in a medium bowl.
  3. In a large bowl, whisk the mashed banana, brown sugar, melted butter, eggs, sour cream, and vanilla until evenly combined.
  4. Add the dry ingredients to the banana mixture. Fold gently until a few flour streaks remain, then fold in 3/4 cup chocolate chips. Stop mixing as soon as the flour disappears.
  5. Divide the batter evenly among the 12 cups; they will be nearly full. Sprinkle the remaining chocolate chips over the tops.
  6. Bake at 425°F for 5 minutes. Without opening the oven, reduce the temperature to 350°F and bake for 14 to 17 minutes more, until the tops spring back and a tester inserted away from a chocolate chip comes out with a few moist crumbs.
  7. Cool in the pan for 5 minutes, then move the muffins to a wire rack.

Cook’s notes

For the best banana flavor, use heavily spotted bananas that mash easily. Measure flour by weight or spoon it lightly into the cup and level it; packed flour makes dry muffins.

Storage

Store completely cooled muffins in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Freeze individually wrapped muffins for up to 2 months.
