These one-bowl bars combine crisp edges, chewy centers, brown sugar, oats, and pockets of melted chocolate.

Chewy Oatmeal Chocolate Chip Bars

Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup semisweet chocolate chips

Directions

  1. Heat the oven to 350°F. Line an 8-inch square pan with parchment.
  2. Whisk melted butter with both sugars until glossy.
  3. Whisk in the egg and vanilla.
  4. Fold in flour, oats, baking soda, and salt just until combined. Stir in most of the chocolate chips.
  5. Press evenly into the pan and scatter remaining chips on top.
  6. Bake for 22 to 26 minutes, until the edges are golden and the center is just set. Cool completely before cutting.

Cook’s notes

Slightly underbaking keeps the centers chewy after cooling.

Storage and reheating
