Peanut butter, oats, flaxseed, honey, and mini chocolate chips form an easy no-bake snack with no raw flour or eggs.

No-Bake Peanut Butter Oat Bites

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flaxseed
  • 1/3 cup mini semisweet chocolate chips
  • 1/3 cup unsweetened shredded coconut, optional
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon fine salt

Directions

  1. Stir the oats, peanut butter, honey, flaxseed, chocolate chips, coconut if using, vanilla, and salt in a medium bowl until evenly combined.
  2. Cover and refrigerate for 20 to 30 minutes. Chilling firms the mixture and allows the oats to absorb some moisture.
  3. Scoop level tablespoons and roll firmly between your palms into balls. If the mixture is still sticky, chill for 10 minutes more. If it seems dry, work in 1 teaspoon peanut butter at a time.
  4. Arrange in a covered container and refrigerate for at least 30 minutes before serving for the best texture.
