Sheet-Pan Sausage, Peppers and Potatoes Recipe

Ingredients

  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil, divided
  • 1 teaspoon smoked paprika

  • 3/4 teaspoon kosher salt, divided
  • 1/4 teaspoon black pepper
  • 14 ounces fully cooked smoked sausage, sliced into 1/2-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 1 tablespoon chopped parsley

Instructions

  1. Heat the oven to 425°F. Line a large rimmed sheet pan with parchment or lightly oil it.
  2. Toss the potatoes with 1 tablespoon oil, paprika, garlic powder, 1/2 teaspoon salt, and pepper. Arrange cut-side down and roast for 15 minutes.
  3. Toss the sausage, peppers, and onion with the remaining oil and salt. Turn the potatoes, add the sausage mixture, and spread everything in one layer.
  4. Roast for 18 to 20 minutes more, stirring once, until the potatoes are tender and the vegetables have browned edges.
  5. Finish with parsley and serve hot.
