  • 1 1/2 pounds baby potatoes, quartered

  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1 tablespoon apple cider vinegar

Directions

  1. 1. Heat the oven to 425°F. Place the potatoes and onion on a large rimmed sheet pan. Toss with 1 1/2 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Roast for 15 minutes.
  2. 2. Meanwhile, whisk the remaining 1 1/2 tablespoons oil with the Dijon, garlic, paprika, thyme, remaining salt, and remaining pepper.
  3. 3. Add the sausage and cabbage to the pan. Pour over the mustard mixture and toss carefully. Spread everything into an even layer.
  4. 4. Roast for 18 to 22 minutes more, flipping once, until the potatoes are fork-tender, the cabbage edges are browned, and the sausage is steaming hot.
  5. 5. Drizzle with apple cider vinegar, toss, and serve.
