  • 1 1/4 pounds sirloin steak, cut into 1-inch cubes

  • 4 cups small broccoli florets
  • 2 tablespoons water
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons chopped parsley

Instructions

  1. Pat the steak very dry and season with salt and pepper.
  2. Heat a large cast-iron or heavy skillet over medium-high until hot. Add 2 teaspoons oil, then sear half the steak in a single layer for about 2 minutes per side. Transfer to a plate and repeat with the remaining steak and oil.
  3. Add broccoli and water to the skillet. Cover for 2 minutes, uncover, and cook for 2 more minutes until bright green and crisp-tender.
  4. Reduce heat to medium. Add butter and garlic and stir for 30 seconds. Return the steak and juices to the pan with Worcestershire and lemon juice.
  5. Toss for 30 to 60 seconds, then remove from heat. Rest the steak for 3 minutes and finish with parsley.
